Vegan Aji Verde Sauce Recipe


"Aji Verde" is a Peruvian green hot sauce....yum! Traditionally It's made up of fresh cilantro, yellow peppers, mayonnaise, and sometimes cheese that makes it creamy and spicy. Typically the sauce can be served alongside baked/grilled chicken and it pairs well with roasted vegetables, bread, potatoes or rice.


My vegan aji verde sauce is the best alternative (and in my opinion) even tastes better! Not too spicy...just the right amount of lemon-y, and won't bother your tummy afterwards!


What you will need:

  • 4-5 garlic cloves

  • 1 small jalapeño

  • 1-2 bunches of cilantro

  • 1 full key lime

  • 6-8 tablespoons of vegan mayo

  • green onions

  • black pepper

  • sea salt

How to:

  1. Combine all of your ingredients in a blender.

  2. Use the "pulse" setting to break up your ingredients for about a minute

  3. Blend at a medium-high speed for about 1-2 minutes.

  4. Store in fridge (sealed).

  5. Ready to serve on all your favorite foods!
